Prepare the chicken
Pat the chicken breasts dry with paper towels. If the breasts are very thick, butterfly them or pound gently to an even thickness of about 1/2 inch to ensure even cooking.
Make the marinade
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, soy sauce, Dijon mustard, honey, dried oregano, smoked paprika, Kosher salt, and black pepper until well combined.
Marinate
Place the chicken in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, massaging it so each piece is coated. Marinate in the refrigerator for at least 30 minutes and up to 4 hours. If short on time, 15-20 minutes at room temperature is acceptable.
Grill & Finish
Preheat grill
Heat a gas or charcoal grill to medium-high (about 400-450°F / 200-230°C). If using a grill pan, heat it over medium-high heat and lightly oil the grates or pan surface.
Grill chicken
Remove the chicken from the marinade and let excess drip off. Place the breasts on the hot grill. Cook undisturbed for 5-6 minutes on the first side until grill marks form and the edges begin to look opaque. Flip and cook 4-6 minutes more on the second side, or until an instant-read thermometer inserted into the thickest part reads 160°F (71°C).
