Prepare equipment and ingredients
Line a small baking tray or several chocolate molds with parchment or keep molds clean and dry. Measure and have all ingredients ready. If using cocoa butter, chop into small uniform pieces so it melts evenly. If using coconut oil, have it measured and at room temperature.
Sift dry ingredients
Sift the unsweetened cocoa powder and powdered sugar together into a medium bowl to remove lumps and ensure a smooth final chocolate. If making milk chocolate, also sift in the whole milk powder and mix until uniformly combined.
Melt fat gently
Set a heatproof bowl over a small saucepan of barely simmering water (double boiler). Add the cocoa butter (or coconut oil) and warm gently, stirring occasionally, until fully melted and smooth, about 3–6 minutes. Remove the bowl from the heat but keep it warm above the steam to prevent re-solidifying.
Combine cocoa and fat
Add about one-third of the sifted dry mixture to the melted cocoa butter and whisk briskly until smooth and fully incorporated. Continue adding the remaining dry mix in two additions, whisking thoroughly each time to avoid lumps. The mixture should be glossy and pourable. If it appears grainy, keep warming for a minute and whisk; do not overheat (keep below 50–55°C / 122–131°F).
Adjust texture and flavor
Stir in the vanilla extract and fine salt. Taste and, if needed, adjust sweetness by adding up to 2 tablespoons more powdered sugar (sifted) and whisking until smooth. If mixture is too thick to pour, warm gently for 15–30 seconds and stir; if too thin, allow to cool briefly to thicken slightly before pouring.
Tempering note (optional, for firm snap)
For a firmer, glossy chocolate with snap: cool the melted chocolate in a bowl set over an ice bath, stirring frequently until it reaches about 27–28°C (80–82°F), then gently warm it again over the double boiler to 31–32°C (88–90°F) for dark-style chocolate (if using milk powder target 30–31°C). Use an instant-read thermometer for accuracy. If you skip tempering, the chocolate will still set but may be softer and less glossy.
Pour into molds
Pour the chocolate mixture into prepared molds or spread onto the lined tray to desired thickness (about 3–5 mm for bars). Tap the molds or tray gently on the counter to release trapped air bubbles and level the surface.
Add optional mix-ins
If using add-ins, sprinkle chopped toasted nuts, dried fruit, cocoa nibs or sea salt flakes on top while the chocolate is still fluid. For evenly distributed mix-ins inside bars, fold them into the chocolate before pouring.
Set and chill
Allow the chocolate to cool and set at room temperature until mostly firm (30–60 minutes depending on thickness). For faster setting, place molds or tray in the refrigerator for 15–25 minutes. Do not freeze, as rapid cooling can cause bloom and texture changes.
Unmold and store
Once fully set and firm to the touch, pop chocolates from molds or break slab into pieces. Store in an airtight container in a cool, dry place (ideally 16–18°C / 60–65°F). If using coconut oil instead of cocoa butter, keep in a cooler spot as it has a lower melting point.
Optional add-ins & finishing
To toast nuts: spread nuts in a single layer on a baking sheet and toast in a 175°C (350°F) oven for 6–10 minutes, stirring once, until fragrant and lightly browned. Cool before chopping and adding to chocolate.
To incorporate dried fruit: roughly chop larger dried fruit and either sprinkle on top of poured chocolate or fold into the chocolate for distribution throughout the bar.
To finish with sea salt: sprinkle a light pinch of sea salt flakes on top of each bar or piece immediately after pouring for a contrasting flavor.
Label and date: Homemade chocolate is best consumed within 2–4 weeks for peak flavor. Keep away from strong odors; store in airtight container separated by parchment if stacking.
