Prepare filling

In a large bowl combine ground pork, finely chopped rehydrated mushrooms, minced shallot, grated carrot, sliced green onion, minced garlic, egg, 2 tablespoons fish sauce, 1 teaspoon sugar and 1/2 teaspoon black pepper. Mix thoroughly until well combined and slightly tacky—this helps the filling bind when fried.

Assemble rolls

Lay one spring roll wrapper on a clean work surface. Place about 2 tablespoons of filling near the bottom third of the wrapper (adjust to wrapper size). Fold the bottom edge up over the filling, fold in both sides snugly, then roll tightly to the top, sealing the edge with a little beaten egg or water. Repeat until all filling and wrappers are used (about 10–12 rolls). Keep assembled rolls covered with a damp towel to prevent drying.

Fry rolls

Heat vegetable oil in a deep skillet or wok to 350°F (175°C) — enough oil to come about 1–1.5 inches up the side. Fry spring rolls in batches, turning occasionally, until evenly golden brown and crisp, about 4–6 minutes per batch. Remove to a wire rack or paper towel-lined plate to drain. If oil temperature drops while frying, allow it to return to 325–350°F before adding the next batch to ensure crispness and prevent grease absorption.

Noodles & Salad

Cook the rice vermicelli according to package instructions: typically soak in very hot water or boil for 3–5 minutes until tender but not mushy. Drain and rinse under cold water to stop cooking, then toss with a few drops of neutral oil to prevent sticking and set aside.

Prepare salad components: arrange washed lettuce leaves, mint, cilantro, julienned cucumber and pickled carrots/daikon on a serving platter or individual bowls. The lettuce is used as fresh wrappers for bites; herbs and cucumber accompany the noodles.

Nuoc Cham Dipping Sauce

Combine 1/2 cup warm water and 2 tablespoons sugar in a small bowl, stirring until the sugar dissolves. Add 3 tablespoons fish sauce and 2 tablespoons fresh lime juice, then the minced garlic and sliced chili. Taste and adjust: add more sugar if too salty, more lime if too sweet, or a splash more water if too intense. Chill briefly if desired.

Assembly & Garnish

To serve Bun Cha Gio: place a portion of vermicelli in a bowl or on a plate. Add a few pieces of sliced or whole crispy spring rolls on top or to the side. Arrange lettuce leaves, mint and cucumber alongside the noodle. Spoon nuoc cham into small dipping bowls or drizzle a few tablespoons over the noodles (many people serve additional sauce on the side).

For each bite: take a lettuce leaf, place a small amount of noodles, a bit of herb, a piece of cucumber and a piece of spring roll, then top with a sprinkle of chopped roasted peanuts and fried shallots if using. Dip into nuoc cham and enjoy.
