Method
Tomato-Pepper Base
Heat oil and sweat aromatics
Warm a 12-inch (30 cm) ovenproof skillet or sauté pan over medium heat. Add 3 tbs olive oil. Once shimmering, add the chopped onion and a pinch of salt and cook, stirring occasionally, until translucent and soft, about 6–8 minutes. Add the diced red bell pepper and continue to cook until softened, about 5 minutes.
Add garlic and spices
Reduce heat slightly and add the minced garlic, ground cumin, sweet paprika, smoked paprika, ground coriander, and red pepper flakes (if using). Cook, stirring, for 60–90 seconds until fragrant — do not burn the garlic.
Add tomatoes and simmer
Stir in the chopped tomatoes (or canned crushed tomatoes), tomato paste, and 1 cup water. Bring the mixture to a gentle simmer. Season with 1 tsp black pepper and 1.5 tsp salt. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the sauce thickens and deepens in flavor, about 12–18 minutes. Taste and adjust salt or heat as needed.

Serve the shakshuka hot, directly from the skillet, with charred balady bread for scooping and salata balady on the side. Encourage diners to tear bread and dip into the tomato sauce and runny yolks. Leftovers can be refrigerated for up to 2 days; reheat gently on the stove.
