Date Grilled Cheese Sandwiches
Prepare dates
Heat a medium skillet over medium heat. Add 2 tablespoons unsalted butter. When melted and foamy, add the halved pitted dates and the minced shallot. Sauté, stirring frequently, for 3–4 minutes until dates soften and begin to caramelize and shallot is translucent.
Stir in 1 teaspoon honey and 1 teaspoon ground black pepper. Cook another 30 seconds to incorporate. Remove from heat and transfer the date mixture to a small bowl; set aside.
Assemble sandwiches: Butter one side of each bread slice with the remaining 1 tablespoon butter. On the unbuttered side of four slices, evenly divide the shredded cheddar (about 1/4 cup per sandwich), fontina, and crumbled Manchego so each sandwich gets roughly a 3-cheese blend totaling about 1 packed cup per sandwich pair (adjust to preference).
Top the cheese on each prepared slice with an even portion of the sautéed dates (about 3 dates per sandwich). Sprinkle a light pinch (about 1/16–1/8 tsp) of coarse sea salt over the cheese + date layer to heighten flavor.
Place the remaining bread slices, buttered side facing out, to close each sandwich. Gently press to compress the filling slightly.
Cook the sandwiches: Place two sandwiches in the skillet (do not overcrowd). Cook for 3–4 minutes on the first side, checking that the bread achieves a golden brown and the cheese begins to melt. Flip carefully with a spatula and cook another 3–4 minutes until the second side is golden and cheese is fully melted. If the bread browns too quickly before the cheese melts, lower the heat and cover briefly (30–60 seconds) to trap heat and accelerate melting.
Remove sandwiches from the pan and let rest 1 minute. Cut in half on the diagonal and serve immediately alongside the chosen side.

Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil. When shimmering, add the drained potato dice in a single layer (work in batches if necessary). Let cook undisturbed for 3–4 minutes so bottoms brown.
Sprinkle 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 3/4 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper over the potatoes. Toss well to evenly coat and cook 1–2 more minutes for spices to bloom.
Remove from heat and stir in chopped fresh parsley if using. Transfer to serving dish and serve warm with the grilled cheese.
