Separate eggs and make zabaglione

Separate the egg yolks from whites while keeping them at room temperature. In a heatproof bowl, whisk together the 4 egg yolks and 120 g granulated sugar until pale and slightly thickened. Place the bowl over a simmering water bath (bowl should not touch the water) and whisk constantly for 6–8 minutes until the mixture is warm, thick, and forms ribbons (this is a quick zabaglione). Remove from heat and let cool slightly.

Cold mascarpone fold

Lightly fold 500 g mascarpone into the still-warm (but not hot) yolk mixture until smooth and homogenous. Chill briefly if mixture becomes too loose (5–10 minutes in fridge).

Whip cream & finish cream

In a chilled bowl, whip 240 ml heavy cream with 1 tsp vanilla extract to soft peaks. Gently fold whipped cream into the mascarpone/yolk mixture until smooth and airy. (If you prefer a fully cooked, safer version, you can substitute 4 pasteurized egg yolks or a cooked custard.)

Coffee Soak & Alcohol

Brew 360 ml strong espresso and while still hot, stir in 2 tablespoons granulated sugar until dissolved. Allow coffee to cool to room temperature, then stir in 60 ml amaretto liqueur. Taste and adjust sweetness or alcohol as desired. Transfer to a shallow dish for dipping.

Prepare amaretti crunch

Place 120 g amaretti biscuits in a sealed bag and smash with a rolling pin to create a mixture of fine crumbs and small chunks. Reserve 40 g of the crushed amaretti for final garnish and set aside. Mix the remaining crushed amaretti with 30 g melted unsalted butter to bind slightly — this will create a crunchy layer.

Assemble the base layer

Quickly dip each piece of sponge cake or halved ladyfingers into the cooled coffee-amaretto mixture for 1–2 seconds per side (do not soak until soggy). Line the bottom of a 23 x 23 cm (9 x 9 in) square dish or similar sized container with a single layer of soaked cake pieces, trimming to fit if necessary.

Add crunch

Evenly sprinkle the buttered amaretti crumbs over the soaked cake layer to create a textured base that will crisp slightly as it chills.

Layering & Chill

Spread about half of the mascarpone-cream mixture (roughly 1/2) evenly over the crumb-covered cake layer using an offset spatula. Add a second quick layer of lightly dipped sponge or ladyfingers (same dipping method, 1–2 seconds each) arranged tightly over the cream. Spread the remaining mascarpone-cream over the second cake layer, smoothing the top. Scatter the reserved 40 g coarse crushed amaretti over the top layer gently so some pieces remain visible.

Cover the assembled tiramisu with plastic wrap and refrigerate for at least 6 hours, preferably overnight. This 'turbo' version uses smashed biscuits and buttered crumbs to speed texture development, but time is still needed for flavors to meld.

Finishing & Serve

Just before serving, dust the top evenly with 15 g unsweetened cocoa powder through a fine sieve. Sprinkle 25 g finely grated dark chocolate over the cocoa for extra chocolate intensity.

Drizzle 30 ml runny honey in a thin zigzag across the surface (or warm the honey very briefly to make it runnier if needed). The honey adds glossy, floral sweetness that contrasts with the bitter cocoa and almond notes.

Slice into squares and serve chilled. Store leftovers covered in the refrigerator for up to 2 days for best texture (the honey and crunchy amaretti will soften over time).
