Smashed Amaretti Base

Line a 20 cm (8 in) round or square baking tin with parchment paper, leaving an overhang for easy removal. Alternatively, use individual dessert glasses or ramekins.

Place the amaretti biscuits into a large zip-top bag and remove excess air. Use a rolling pin or the bottom of a heavy pan to gently smash the biscuits into mostly coarse crumbs with some small chunks remaining for texture (aim for a mix of fine crumbs and pea-sized pieces). You should have about 1.5 to 2 cups of crumbs (≈200 g).

Melt the unsalted butter in a small saucepan over low heat or in a microwave-safe bowl in 20-second bursts until fully liquid. Stir in the granulated sugar and salt until dissolved.

Transfer the smashed amaretti crumbs to a medium bowl, pour the melted butter mixture over the crumbs, and mix with a spatula until evenly combined and the crumbs hold together when pressed.

Press the crumb mixture evenly into the bottom of the prepared tin (or divide among individual serving dishes) using the back of a measuring cup or a flat-bottomed glass to compact it firmly. Chill in the refrigerator while you prepare the cream layer, at least 15 minutes.

Cream Layer

Chill a medium mixing bowl and the beaters of a hand mixer (or the bowl/whisk of a stand mixer) for 10 minutes to help the cream whip properly, if available.

In the chilled bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Beat briefly on low speed just to smooth the mascarpone (avoid overbeating, which can make it grainy).

In a separate small bowl, whip the heavy cream to soft peaks: start on medium speed and once the cream begins to thicken, increase speed and stop when peaks form that barely hold their shape.

Gently fold about one-third of the whipped cream into the mascarpone to lighten the mixture, then fold in the remaining whipped cream until homogeneous and airy. Do not overmix or the cream will deflate.

Take the chilled crumb base from the refrigerator. Spoon or pipe the mascarpone-cream mixture over the crumb layer and spread evenly to cover. Smooth the top with an offset spatula or the back of a spoon. If making individual servings, layer or dollop as desired.

Return the assembled dessert to the refrigerator to firm for at least 30 minutes (up to 2 hours). This helps the flavors meld and the cream set slightly.

Honey Drizzle & Finish

While the dessert chills, warm the honey gently in a small saucepan over low heat or in the microwave for 10–15 seconds to make it more fluid. Stir in the lemon zest to add brightness and a slight citrus lift to the honey.

When ready to serve, remove the dessert from the refrigerator. If you used a tin, lift it out using the parchment overhang and transfer to a serving board. For a clean slice, run a sharp knife under hot water, dry it, and slice; wipe the knife between cuts.

Drizzle the warmed, zested honey over the top of the cream layer in a thin, even stream. Use all or part of the honey depending on desired sweetness (60 ml is enough for a generous drizzle for the whole dessert).

Scatter the toasted sliced almonds over the honey and cream for crunch and nuttiness. Garnish with fresh mint leaves if using.

Serve chilled or at cool room temperature. Leftovers can be refrigerated covered for up to 2 days; drizzle additional honey just before serving if needed.
