Bruschetta topping
Prepare tomatoes and aromatics
Place the diced ripe tomatoes in a medium bowl. Add the finely chopped semi-dried tomatoes, minced garlic, finely diced red onion and chopped capers.
Season and rest
Stir in 2 tablespoons extra-virgin olive oil, 1 teaspoon balsamic vinegar, 3/4 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Fold in the chiffonade basil leaves gently so they don’t darken. Let the mixture sit at room temperature for 15–20 minutes to marry flavors; if preparing ahead, refrigerate up to 2 hours and bring back to room temperature before serving.
Basil oil (homemade)
Blanch and chill basil (optional for brighter green color)
Bring a small pot of water to a boil. Have an ice bath ready. Blanch the basil leaves for 5–8 seconds, then immediately transfer to the ice bath. Drain and gently squeeze out excess water. This step is optional but helps retain a brighter green color in the oil.
Blend basil and oil
Combine the blanched (or raw) basil leaves, 1/2 cup extra-virgin olive oil, 1/2 teaspoon lemon zest (if using) and 1/4 teaspoon salt in a blender or food processor. Pulse and blend until the mixture is smooth and vibrant green, scraping down the sides as needed. If the blend seems too thick, add up to 1 tablespoon more oil to reach a pourable consistency.
Strain (optional)
For a silky oil, pour the blended basil mixture through a fine-mesh sieve or cheesecloth into a small bowl, pressing to extract as much oil as possible. For a rustic oil, skip straining and use as-is. Transfer basil oil to a small bottle or jar and refrigerate if not using immediately; bring to room temperature before serving (about 15 minutes).
Bread & finishing
Toast the bread
Preheat the oven to 425°F (220°C). Arrange the sliced bread on a baking sheet. Brush both sides lightly with 2 tablespoons extra-virgin olive oil. Toast in the oven for 6–8 minutes, flipping once, until edges are golden and crisp. Alternatively, grill slices on a hot grill pan for 1–2 minutes per side until charred spots appear.
Garlic rub
Remove toasted bread from the oven. While still warm, rub the cut side of 1 garlic clove over the top of each slice to impart a subtle garlic flavor.
Assemble bruschetta
Spoon a generous tablespoon or two of the tomato mixture onto each toast slice, letting any excess juices drain off back into the bowl so the bread stays crisp. Drizzle 1–2 teaspoons of the basil oil over each assembled bruschetta for bright herbal flavor. If desired, sprinkle a small amount of shaved Parmesan or grated Pecorino and finish with a few microgreens or extra basil leaves.
Serve
Arrange bruschetta on a platter and serve immediately so the bread stays crisp. Leftover topping can be stored covered in the refrigerator for up to 2 days. Basil oil keeps refrigerated for up to 5 days.
