Pulse tapenade
Place the pitted Leccino olives, drained capers, garlic cloves, and chopped parsley into a small food processor. Pulse in 6–8 short bursts until coarsely chopped — you want a spreadable texture with some small olive pieces, not a puree.
Emulsify
With the processor running, drizzle in the 3 tablespoons extra-virgin olive oil and the 1 teaspoon fresh lemon juice until the mixture comes together into a glossy, spreadable paste. If the tapenade seems too dry, add up to 1 tablespoon more olive oil. Season with freshly ground black pepper and, if using, a pinch of red pepper flakes. Taste and add a pinch of sea salt only if needed (capers and olives are already salty).
Transfer the tapenade to a small bowl and let rest at room temperature while you prepare the bread so flavors meld (at least 10 minutes).
Bread & assembly
Toast slices
Brush one side of each slice lightly with the 2 tablespoons extra-virgin olive oil. Arrange slices oil-side up on a baking sheet and bake for 6–8 minutes until edges are golden and crisp, or grill for about 1–2 minutes per side until toasted and charred lightly. Remove from oven or grill.
Garlic rub
While the toasts are still warm, rub the cut side of the halved garlic clove across the surface of each slice to impart a mild garlic flavor.
Assemble bruschetta
Use a small knife or spoon to spread about 1 tablespoon of tapenade onto each toast slice. Garnish each piece with a small basil leaf or a sprig of parsley. If desired, finish with a light drizzle of extra-virgin olive oil and a small pinch of sea salt to taste.
Serve
Arrange bruschetta on a platter and serve immediately while the bread is warm and crisp. Leftover tapenade can be refrigerated in an airtight container for up to 4 days.
