Toast bread
Place the 2 slices of 7-grain bread in a toaster and toast to medium — crisp edges with a still-slightly-tender interior (about 2–3 minutes depending on toaster).
Spread peanut butter
Immediately after toasting, while the bread is warm, spread 1.5 tablespoons of crunchy peanut butter evenly on each slice so the surface is covered but not dripping.
If peanut butter is very stiff, warm briefly (5–8 seconds) in the microwave in a microwave-safe bowl and stir before spreading to make it easier to distribute.

Slice banana
Peel the banana and slice it into 1/4-inch (about 6 mm) rounds. Aim for even slices so they sit flat on the toast.
Arrange banana
Lay banana slices on top of the peanut butter in neat rows or overlapping circles to fully cover each slice of toast (use about half the banana on each toast, or all on one if preferred).
Add chia and cinnamon
Sprinkle 1/2 teaspoon chia seeds and 1/2 teaspoon ground cinnamon over each slice (total 1 tsp chia and 1 tsp cinnamon for both toasts). Spread evenly so you get a bite of seeds and spice with each bite.
Drizzle honey
Drizzle the 1 tablespoon of wildflower honey evenly over both toasts. If you prefer a lighter touch, use the optional extra 1/2 teaspoon to accent the flavor instead.
If using, finish with a tiny pinch (about 1/8–1/4 tsp) of flaky sea salt on each slice to enhance contrast between sweet and nutty flavors.
Finishing
Optionally garnish with mint leaves for color. Serve immediately so the toast remains crisp; banana will soften over time.
Cut each toast in half or into quarters if desired and serve warm or at room temperature.
