Preheat and prepare the bread
Preheat your oven to 425°F (220°C). Slice the baguette or loaf on a slight diagonal into 1/2-inch (1.2 cm) thick slices, keeping the slices separated on a sheet pan lined with parchment or foil. If you prefer a crisper bottom, place slices cut-side up; for extra crispness, you can toast briefly before adding toppings.
Make the garlic butter
In a small bowl, combine the softened unsalted butter, minced garlic, finely chopped parsley (reserve a small pinch for finishing), lemon zest, salt, and black pepper. Mix thoroughly until smooth and evenly combined. If the butter is too firm, microwave 5–8 seconds to soften, but do not melt.
Assemble the toasts
Spread approximately 1 to 1 1/2 tablespoons of the garlic butter mixture evenly over each bread slice. If desired, lightly brush the exposed crust edges with olive oil for extra browning. Sprinkle shredded mozzarella evenly over each slice (about 2 tablespoons per slice depending on size). Lightly dust the mozzarella with grated Parmesan, then sprinkle a small pinch (about 1/8 teaspoon) of chili flakes over each slice for a gentle heat.
Bake until golden and bubbly
Place the prepared sheet pan in the preheated oven and bake for 8–12 minutes, or until the cheese is fully melted and beginning to bubble and turn golden at the edges. For extra browning, switch the oven to broil for the last 1–2 minutes—watch closely to avoid burning.
Finish and serve
Remove the toasts from the oven. Immediately sprinkle the reserved chopped parsley and an extra light dusting of lemon zest over the hot cheese to brighten flavors. Let the toasts rest 1 minute, then transfer to a serving platter. Serve warm with additional chili flakes or grated Parmesan on the side for guests to add to taste.
