Method
Garlic Cheese Butter Spread
Soften butter
Leave the unsalted butter at room temperature for 20–30 minutes until easily spreadable. If short on time, cut into small cubes to speed softening.
Prepare garlic and parsley
Finely mince 4 garlic cloves and chop enough fresh parsley to yield 1/4 cup packed. Zest the lemon to get 1 tablespoon of bright zest and set aside.
Combine ingredients
In a medium bowl, mash the softened butter with a fork until smooth. Stir in the minced garlic, chopped parsley, lemon zest, red chili flakes, salt, black pepper, and grated Parmesan (if using) until evenly distributed.
Fold in mozzarella
Fold 1 3/4 cups of the shredded mozzarella into the butter mixture so the cheese is well-coated and slightly binding. Reserve about 1/4 cup of mozzarella for topping each toast before broiling.
Adjust seasoning
Taste a small smear and adjust salt, chili flakes, or lemon zest to balance bright, spicy, and savory notes.
Assembling and Baking
Preheat oven
Preheat the oven to 425°F (220°C). Position an oven rack in the center or one notch above center for good browning.
Prepare bread
Brush both sides of each bread slice lightly with olive oil to help crisp and prevent sogginess. Place slices on a baking sheet lined with parchment or a lightly oiled sheet, spacing them slightly apart.
Add mozzarella topping
Sprinkle the reserved 1/4 cup shredded mozzarella evenly over the top of the prepared slices so each has a light cheesy cap that will brown.
Bake until golden
Bake in the preheated oven for 8–10 minutes, until the edges of the bread are toasted and the cheese is melted. For a browner, bubbly top, switch the oven to broil for 1–2 minutes—watch closely to avoid burning.
Finish and garnish
Remove to a rack, sprinkle with the remaining tablespoon of chopped parsley and an extra pinch of lemon zest and chili flakes to taste. Optionally squeeze a little lemon wedge over the toasts for brightness.
Serve
Serve hot as a side or appetizer. These are best enjoyed immediately while the cheese is melty and the crust is crisp.
