Combine and emulsify

Add 2 oz chilled citrus soju, 0.5 tbs yuzu marmalade, 0.5 oz fresh lemon juice and 0.25 oz simple syrup (if using) into a cocktail shaker.

Dry shake to incorporate marmalade

Seal the shaker and dry-shake (no ice) vigorously for 8–10 seconds to emulsify the marmalade into the spirit and juice, creating a smooth texture.

Shake with ice

Add ice to the shaker (about 4 oz or until three-quarters full) and shake hard for 10–12 seconds until well chilled and slightly frothy.

Strain

Double-strain the cocktail into a chilled coupe or nick-and-nora glass to remove any marmalade solids and small ice shards, leaving a glossy, slightly thickened liquid.

Finish & Garnish

Add 0.5 oz passionfruit pearls to the bottom of the glass before pouring or gently drop them in after pouring. They will provide bursts of passionfruit flavor and a pleasing visual contrast.

Float a lemon wheel on the surface or place it on the rim. If desired, express a small amount of lemon oil over the top and sprinkle 1 tsp fine lemon zest across the surface for extra aromatic lift.

Serve immediately. Provide a short spoon or straw so the drinker can pop or stir the passionfruit pearls into the cocktail as they prefer.
