Method
Prepare proteins and bread

Warm and shred chicken
If using leftover or refrigerated cooked chicken, warm it briefly in a microwave (30–60 seconds) or in a skillet over medium heat with a splash of water to avoid drying. Once warm, shred or thinly slice the chicken so it layers evenly in the sandwich.

Crisp the bacon
If bacon is not already cooked, cook 8 slices in a skillet over medium heat until crisp, about 6–8 minutes, turning as needed. Drain on paper towels and chop into bite-sized pieces.

Assemble sandwiches

Place the bottom halves of the buttered rolls on a work surface. Divide the shredded chicken evenly among the four sandwiches (about 0.5 cup each). Season the chicken lightly with the salt and half of the black pepper (reserve the rest for finishing).

Drizzle about 1 tablespoon of ranch dressing over the chicken on each sandwich (use slightly more if you prefer a saucier sandwich).

Sprinkle the chopped bacon evenly over the ranch-dressed chicken (about 2 slices-worth per sandwich).

Top the bacon layer with the four-cheese blend, dividing the 2 cups evenly so each sandwich gets roughly 0.5 cup of cheese. If you like extra cheesiness, add a little more.

If using optional add-ins, scatter a few thinly sliced scallions and/or a small handful of leafy greens on top of the cheese. Add a few drops of hot sauce if desired.

Cap each sandwich with the top half of the roll, buttered side up.
Cook and finish

If using a skillet/griddle: place the assembled sandwiches buttered-side-down on the hot surface and press gently with a spatula or a heavy pan. Cook for 3–5 minutes until the bottom is golden and crisp. Then flip the sandwiches carefully, lower the heat to medium-low, cover the pan with a lid or foil to help melt the cheese, and cook another 3–4 minutes until the cheese is melted and the bread is golden. If the bread is browning too quickly, reduce heat slightly.

If using an oven: place sandwiches on a baking sheet, buttered side up for the tops. Bake 8–10 minutes, then switch to broil for 1–2 minutes if needed to get the tops golden and the cheese fully melted. Alternatively, bake with the buttered side down on a skillet placed in the oven to crisp the bottom.

Remove sandwiches from heat. Let rest 1 minute, then slice in half. Taste and finish with remaining black pepper.
