Prepare lobster

If you have whole cooked lobster or live lobster to cook: boil shells for 8–12 minutes until opaque (times vary by size). Cool slightly, remove tail, claws and knuckles, and pick meat into bite-sized chunks. If using pre-cooked lobster meat, pat dry with paper towels and cut large pieces into 1-inch chunks.

Combine dressing

In a medium bowl, whisk together 1 tablespoon mayonnaise, 1 tablespoon fresh lemon juice, 1 teaspoon Dijon mustard, 1 teaspoon lemon zest, and the optional 1/4 teaspoon smoked paprika or cayenne (if using). Season with 3/4 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper; adjust to taste.

Fold lobster and aromatics

Add the lobster meat, 2 tablespoons finely diced celery, and 2 tablespoons chopped chives to the dressing. Gently fold until lobster is coated; avoid overmixing so chunks remain intact. Taste and adjust seasoning — add remaining 1/4 teaspoon salt or pepper if needed. Refrigerate the salad 10–20 minutes to let flavors meld, covered, but do not over-chill (serving slightly chilled is ideal).

Toast buns

Spread softened unsalted butter (about 3 tablespoons total) evenly inside and on the outside of each top-split bun. Heat a large skillet or griddle over medium heat. Toast buns, buttered side down, 1–2 minutes until golden and crisp; press gently with a spatula for even contact. Optionally spread 2 tablespoons mayonnaise inside the toasted buns for extra richness and to protect bread from moisture.

Line buns (optional)

If using lettuce, place a leaf into each toasted bun to line it; this keeps the bread from getting soggy and adds crunch.

Fill rolls

Divide the lobster salad evenly among the 4 buns (about 4 ounces of lobster mixture per roll). Gently mound so chunks remain visible and tender. Garnish with a sprinkle of chopped parsley or extra snipped chives, and an extra grind of black pepper if desired.

Serve

Serve immediately with lemon wedges on the side. Lobster rolls are best eaten fresh while buns are warm and lobster chilled slightly. Offer potato chips, fries or a crisp green salad on the side.

Optional Steps & Notes

If you prefer a warm lobster roll (Connecticut-style), warm the lobster meat gently in a skillet with 1–2 tablespoons melted butter for 1–2 minutes, then skip mayonnaise in the filling and serve hot in butter-toasted buns.

Adjust mayonnaise quantity up to 2–3 tablespoons if you like a creamier filling, or reduce for a lighter, more lobster-forward roll.
