Method

Prepare and marinate

Trim and dry

If wings are whole, separate into drumettes and flats using kitchen shears. Remove wing tips if desired. Pat wings thoroughly dry with paper towels — dryness helps crisping.

Season and toss with baking powder

Place wings in a large bowl. Sprinkle kosher salt, black pepper and baking powder over the wings. Toss with your hands or tongs so each piece is evenly coated. The baking powder raises pH and helps the skin crisp in the oven.

Optional marinade

If using the marinade for extra flavor, whisk olive oil, soy sauce, minced garlic, honey and apple cider vinegar in a small bowl. Add wings and toss to coat. Marinate in the refrigerator 30 minutes up to 4 hours. If marinated, remove wings from fridge 20 minutes before cooking to come toward room temperature and re-dry briefly with paper towels so surface is not wet.

Oven baking (crispy wings)

Preheat oven to 230°C (450°F). Place a wire rack on a large rimmed baking sheet and spray or lightly oil the rack. The rack allows air circulation to crisp skin. Arrange wings in a single layer on the rack with space between pieces.

Bake on the middle rack for 30 minutes. After 30 minutes, flip each wing and continue baking another 12–20 minutes until skin is deep golden brown and crisp and internal temperature reaches at least 74°C (165°F). Total bake time will be about 42–50 minutes depending on wing size and oven.

Sauce and finishing

Make classic buffalo sauce

While wings finish baking, melt unsalted butter in a small saucepan over low heat. Add hot sauce and brown sugar. Stir until sugar dissolves and sauce is smooth and slightly glossy, 2–3 minutes. Keep warm.

Toss or brush

When wings are done, transfer them to a large clean bowl. Pour half the buffalo sauce over wings and toss to evenly coat. Taste and add more sauce if desired. Alternatively, brush sauce onto wings instead of tossing for a lighter coating.

Garnish and serve

Plate wings and sprinkle with sesame seeds and chopped green onion (if using). Serve immediately with celery, carrot sticks and blue cheese or ranch dressing on the side if desired.
