Prepare tomatoes

Wash the tomatoes and pat dry. Slice each tomato into 1/4-inch to 1/2-inch thick slices. If tomatoes are very large, cut into rounds about 1/2-inch thick so they match the mozzarella slices.

Prepare mozzarella

Drain fresh mozzarella if packed in water and gently pat dry with paper towels. Slice into rounds roughly the same thickness as the tomato slices (about 1/4 to 1/2 inch).

Assemble

On a large platter or individual plates, arrange tomato and mozzarella slices in an overlapping pattern (tomato, mozzarella, tomato...) or in stacked layers. Tuck whole or torn basil leaves between slices and scatter remaining basil over the top.

Dressing & Seasoning

Drizzle the extra-virgin olive oil evenly over the arranged tomatoes and mozzarella. Lightly drizzle the balsamic glaze or a few teaspoons of aged balsamic vinegar across the salad in a thin stream.

Sprinkle sea salt evenly over the tomatoes and mozzarella. Grind or sprinkle freshly ground black pepper to taste (about 1 tsp across the whole salad). If using, zest a small amount of lemon over the salad for brightness.

Let the salad sit for 5 minutes at room temperature to allow flavors to meld before serving.

Optional Finishes

Garnish with extra basil leaves. If desired, add a final light drizzle of olive oil or a few more drops of balsamic glaze just before serving.
