Cauliflower & Batter
Prepare cauliflower
Preheat oven to 450°F (230°C) if baking, or heat a wide skillet for frying. Rinse and thoroughly dry cauliflower. Cut head into bite-sized florets, aiming for 1-1.5 inch pieces so they cook evenly.
Make batter
In a large bowl, whisk together flour, milk, water, egg (if using), garlic powder, onion powder, smoked paprika, salt, and black pepper until a smooth, slightly thick batter forms. Batter should coat the back of a spoon—add up to 2 tablespoons more water or milk if too thick.
Coat florets
Working in batches, toss florets in the batter to fully coat. If using panko for extra crunch, transfer battered florets to a shallow bowl of panko and press gently to adhere a light layer. Place coated florets on a wire rack set over a sheet pan.

Shallow fry method (crispest)
Heat 2–3 tablespoons vegetable oil in a large skillet over medium-high heat. When oil shimmers, add battered florets in a single layer without crowding (work in batches). Fry 2–3 minutes per side until golden and crisp. Transfer to a rack or paper towel-lined plate to drain. Continue with remaining florets, adding more oil as needed.
Baking method (lighter, hands-off)
Arrange coated florets on a parchment-lined sheet pan in a single layer. Lightly spray or brush florets with nonstick spray or 1–2 tablespoons oil. Bake at 450°F (230°C) for 20–25 minutes, turning once halfway, until edges are browned and batter is set and crisp. For extra crispness, broil 1–2 minutes while watching closely.
Buffalo Sauce
Make sauce
While florets cook, combine hot sauce, butter, brown sugar (or honey), apple cider vinegar, and Worcestershire sauce in a small saucepan over low heat. Stir until butter melts and sauce is glossy and slightly thickened, about 2–3 minutes. Taste and adjust seasoning: more sugar to tame heat or more vinegar for tang.
Toss cauliflower in sauce
Place cooked cauliflower in a large bowl. Pour warm buffalo sauce over florets and gently toss to coat evenly. If you prefer a saucier result, reserve a small amount of sauce to drizzle when serving.
To Serve
Leftovers: store cooled cauliflower and extra sauce separately in airtight containers in the refrigerator for up to 3 days. Reheat in a 375°F oven for 8–10 minutes to regain crispness, then re-toss in warmed sauce.
