Specials Appetizers Platter
Method
Specials Appetizers Platter
Prepare cheeses and meats
Remove cheeses and cured meats from the refrigerator 20–30 minutes before serving so they come to room temperature. Thinly slice the harder cheeses (manchego, cheddar) into 1/8–1/4 inch slices. Cut the brie into wedges. Fold or roll the prosciutto and slice the salami into bite-size rounds; arrange them on the platter in small, separated piles to make selection easy.
Arrange pickled and marinated items
Place the marinated olives and cornichons in small bowls or nestle them on the platter where they won’t roll off. Drain any excess marinade from the olives to avoid soggy crackers.
Add fresh produce and nuts
Rinse and dry the grape or cherry tomatoes, then scatter them in clusters around the platter. Scatter the toasted nuts in a small pile on the board or in a ramekin to keep them contained.
Condiments and finishing touches
Spoon the whole-grain mustard into a small dish and place on the board. Drizzle 2 tablespoons of honey over the brie wedge (or serve honey in a separate dish). Lightly drizzle 2 tablespoons of extra-virgin olive oil over any firmer cheeses if desired and finish with a sprinkle of freshly cracked black pepper over the cheeses and tomatoes. Tuck fresh basil leaves around the platter for color and aroma.
Presentation and serving
Arrange the elements with contrasting colors and textures next to each other (cheese next to meats, crunchy crackers next to soft brie). Ensure serving utensils are available: cheese knife for brie, small forks or toothpicks for meats and pickles, and small spoons for honey and mustard. Keep the platter on a clean surface and top off items (crackers, tomatoes, olives) from reserves as needed.
