Preparation Steps

1. Prepare the Broth

In a saucepan, heat the vegetable broth over medium heat and keep it warm but not boiling.

2. Sauté the Aromatics

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

3. Toast the Rice

Add the Arborio rice to the skillet and stir well to coat the grains with the oil and butter. Cook for about 2 minutes until the rice is slightly translucent at the edges.

4. Add Broth Gradually

Pour in a ladleful of warm vegetable broth and stir continuously until the liquid is absorbed. Repeat this process, adding broth a ladleful at a time and stirring until each addition is absorbed before adding more.

5. Finish the Risotto

After about 18-20 minutes, when the rice is creamy and al dente, remove the skillet from heat. Stir in the remaining butter, grated Parmesan cheese, salt, black pepper, and chopped parsley.

6. Serve

Serve the risotto hot, garnished with extra Parmesan cheese and parsley if desired.
