Sausage Patties
Make sausage mixture
In a medium bowl combine 1 lb ground pork, 2 tbsp pure maple syrup, 2 tsp finely chopped yellow onion, 3 tsp salt, 1 tsp black pepper, 1 tsp dried sage, and 1 tsp garlic powder. Mix gently until just combined—avoid overworking so patties stay tender.
Form and cook patties
Divide mixture into four equal portions (about 4 oz each). Shape each into a flat round patty slightly larger than the English muffin. Heat 1 tbsp neutral oil in a large skillet over medium heat. Add patties (work in batches if necessary) and cook 3-4 minutes per side, pressing slightly to ensure even contact. Internal temperature should reach 160°F (71°C). Transfer cooked patties to a plate and keep warm.
Roasted Potatoes
Prepare potatoes
Preheat oven to 425°F (220°C). Halve any larger baby potatoes so pieces are roughly 1–1½ inches. In a bowl toss 1 lb potatoes with 2 tbsp extra-virgin olive oil, 1 tsp paprika, 1 tsp garlic powder, 1 tsp dried rosemary (or thyme), 1 tsp salt, and 1/2 tsp black pepper until evenly coated.
Roast potatoes
Spread potatoes in a single layer on a rimmed baking sheet. Roast in the preheated oven 20–25 minutes, shaking pan or flipping potatoes halfway, until golden and tender when pierced with a fork. If making simultaneously with sausage, start potatoes first so they finish while assembling sandwiches.
Egg Muffins
Toast muffins and melt butter
Split 4 English muffins and toast them lightly. Melt 1 tbsp unsalted butter in the same skillet used for sausage over medium-low heat and brush butter onto cut sides of the muffins for extra flavor.
Cook eggs
For each sandwich, crack 1 large egg into a small bowl and season with a pinch of 1 tsp salt and 1 tsp black pepper divided among eggs. Option A (fried): In the skillet over medium-low, add a small pat of butter or a drizzle of oil and cook the egg sunny-side-up or over-easy until whites are set but yolks still soft, about 2–3 minutes. Option B (fried with ring): Use a 3-inch metal ring or trimmed cleaned empty tuna can placed in skillet; crack egg into ring and cook until set, about 2–3 minutes. Option C (scrambled): Whisk eggs lightly and cook, stirring gently, until creamy and just set. Choose preferred method.
Assemble sandwiches
Place a buttered muffin bottom on a plate, top with a cooked maple sausage patty, then one cooked egg. Top the egg with a slice of provolone cheese. If you want the cheese melted, place the assembled open-faced sandwiches under a broiler for 30–60 seconds or cover the skillet with a lid for 30–45 seconds until cheese softens and slightly melts. Cap with the muffin top.

Storage: Refrigerate leftover sausage patties in an airtight container for up to 3 days or freeze up to 3 months. Reheat patties in a skillet or microwave before assembling.
