Turbinado Syrup (makes about 6 oz)
Method
Turbinado Syrup
Make simple turbinado syrup
Place 3 tablespoons turbinado sugar in a small heatproof container. Add 3 tablespoons hot water (not boiling) and stir until sugar fully dissolves. Let cool to room temperature. Transfer to a small jar and refrigerate. Yields about 6 tablespoons (3 oz), enough for several cocktails. Use 0.25 oz per Old Fashioned.
Cocktail Preparation
Add ingredients to mixing glass
In a mixing glass or rocks glass, add 0.25 oz cooled turbinado syrup, 2 dashes Fee Brothers Orange Bitters and 1 dash Angostura bitters (optional).
Stir to chill and dilute
If using a mixing glass, stir with a bar spoon for 20–30 seconds until the outside of the glass feels cold and properly diluted (~15-20% dilution target for spirit-forward drinks). If built in the rocks glass, gently stir with a spoon for 20–30 seconds.
Express and garnish
Take an orange peel and hold it over the glass, skin side down. Give a firm twist to express oils over the surface, then wipe the rim with the peel and drop it into the drink as garnish.
Serve
Serve immediately on the rocks with the large cube. Encourage sipping slowly to enjoy the balance of bourbon, turbinado sweetness, and orange bitters.
