Fresh Burrata & Mozzarella

Bring cheeses to room temperature

Remove burrata and fresh mozzarella from refrigerator 20–30 minutes before serving so they soften and show their best flavor and texture.

Plate cheeses

On a large serving platter or individual plates, gently tear the burrata into large pieces (if using) and arrange the sliced fresh mozzarella nearby in overlapping discs. Keep some space for the tomato salad and garnishes.

Prepare tomatoes and aromatics

Place halved cherry tomatoes and optional heirloom slices into a medium bowl. Add the thinly sliced red onion, torn basil leaves, and chopped oregano or thyme.

Season and toss

In a small bowl whisk together 4 tablespoons extra-virgin olive oil, 1.5 tablespoons aged balsamic vinegar, 1 tablespoon lemon juice, 1 teaspoon sea salt, 1 teaspoon black pepper, and optional 1/4 teaspoon red pepper flakes. Pour this dressing over the tomato mixture and toss gently to coat. Let sit at room temperature 10–15 minutes to macerate and meld flavors.

Toast nuts (if using)

In a small dry skillet over medium heat, toast 2 tablespoons pine nuts or chopped walnuts, stirring frequently for 2–3 minutes until fragrant and lightly golden. Remove from heat and cool.

Assemble on platter

Spoon the dressed tomato salad alongside and partly over the arranged cheeses. Drizzle the cheeses lightly with the reserved 1 tablespoon finishing olive oil and, if desired, a teaspoon of the balsamic glaze in a decorative pattern. Scatter the toasted nuts over the tomatoes and around the cheese.

Finish and garnish

Sprinkle flaky sea salt over the cheeses and a little freshly ground black pepper. Garnish with basil sprigs. If you prefer extra acidity, serve additional balsamic glaze on the side.

Prepare bread

Lightly brush sourdough or ciabatta slices with a little olive oil and toast on a grill pan or in a 400°F (200°C) oven until golden and crisp, about 5–7 minutes. Rub with a cut clove of garlic if desired for extra flavor.
