Prepare oven and pans
Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans (or line with parchment circles).
Whisk the dry ingredients: in a medium bowl combine 2 cups all-purpose flour, 2 tsp baking powder and 1 tsp salt. Set aside.
Cream butter and sugar: in the bowl of a stand mixer fitted with the paddle (or with a large bowl and hand mixer), beat 1 cup softened unsalted butter and 1.25 cups granulated sugar on medium-high speed until light and fluffy, about 3–4 minutes.
Add the flavorings: mix in 2 tablespoons lemon zest, 3 tablespoons fresh lemon juice, 3 tablespoons limoncello and 1 tsp vanilla extract until combined.
Alternate dry and wet: with the mixer on low, add one-third of the dry ingredients, then half of 1/2 cup Greek yogurt (or sour cream) plus a quarter cup of whole milk mixture, continue alternating, finishing with the dry ingredients. If batter looks too stiff, add the remaining milk tablespoon by tablespoon to reach a thick but pourable consistency.
Divide batter evenly between prepared pans, smoothing the tops with an offset spatula.
Bake for 22–28 minutes, rotating the pans halfway, until golden and a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking to keep the cake tender.
Cool: allow cakes to cool in the pans on a wire rack for 10–15 minutes, then run a knife around the edges and invert onto racks to cool completely (about 1 hour).
Optional soak: if you like a stronger limoncello note, mix the optional 1 tbsp limoncello with 1 tbsp water and brush lightly onto the cooled cake layers before assembling (see Decoration section).
Mascarpone Filling / Frosting
Chill tools: place the mixing bowl and whisk attachment (or beaters) in the refrigerator for 10–15 minutes to keep the cream stable.
Whip cream: pour 1 cup heavy cream into the chilled bowl and whip on medium-high until soft peaks form. Start slow to avoid splatter.
Prepare mascarpone base: in a separate bowl, gently loosen 16 oz room-temperature mascarpone with 0.5 cup powdered sugar, 1 tablespoon lemon juice, 1 tablespoon limoncello, 1 tablespoon lemon zest, 0.5 tsp vanilla extract and 0.25 tsp fine sea salt. Use a spatula and fold — do not overbeat mascarpone or it may become grainy.
Fold whipped cream into mascarpone: carefully fold the whipped cream into the mascarpone mixture in two additions until smooth and uniform, keeping the mixture airy. Taste and adjust sweetness or lemon if desired (add up to 1–2 tbsp more powdered sugar or a bit more lemon juice).
Chill: refrigerate the frosting for 15–20 minutes if it becomes too soft to spread.
White Chocolate Glaze & Decoration
Make glaze: place 8 oz chopped white chocolate in a heatproof bowl. Heat 0.25 cup heavy cream until steaming (do not boil) and pour over chocolate. Let sit 1 minute, then stir until smooth. Stir in 1 tbsp unsalted butter for shine, if using. If glaze is too thick, warm gently over a double boiler and add a teaspoon of cream at a time until pourable.
Level cake layers: if the cake tops are domed, trim with a serrated knife to create flat surfaces for stacking. Place one layer on your serving plate or cake turntable.
Assemble: optionally brush the bottom layer lightly with the optional limoncello syrup (1 tbsp limoncello + 1 tbsp water). Spread about one-third of the mascarpone filling evenly over the bottom layer (about 1 to 1 1/4 cups). Place the second layer on top.
Crumb coat: spread another thin layer of mascarpone frosting over the top and sides to seal crumbs. Chill the cake for 20–30 minutes to set the crumb coat.
Final frosting: spread the remaining mascarpone filling smoothly over the top and sides. Use an offset spatula to make a clean finish or leave slightly rustic.
Glaze the top: allow the white chocolate glaze to cool slightly (so it’s warm but not hot) and pour it onto the center of the cake, using a spatula to gently encourage it to drip slightly toward the edges for a light drip effect. If desired, reserve a little glaze to pipe or dot decorations.
Garnish: arrange 4 thin lemon slices or candied lemon peel on top. Sprinkle 1 tsp lemon zest across the top for fragrance. If you like, brush the lemon slices very lightly with the remaining 1 tbsp limoncello for shine and aroma.
Chill before serving: refrigerate the assembled cake for at least 1 hour to let flavors meld and the frosting and glaze set. Remove from the fridge 20–30 minutes before serving to soften slightly.
