Prepare citrus
Wash tangerines. Zest one to obtain 1 tablespoon of fine zest, avoiding white pith. Juice enough tangerines to yield 3 cups of juice (about 8–10 medium tangerines). Strain juice through a fine-mesh sieve into a measuring cup to remove pulp and seeds; press lightly to extract liquid but not bitter pith.
Make simple syrup
In a small saucepan combine 1 cup granulated sugar and 1 cup water. Add tangerine zest. Bring to a gentle simmer over medium heat, stirring until the sugar is fully dissolved. Once dissolved, simmer 1 minute to infuse zest, then remove from heat. Let steep 10 minutes off heat to intensify flavor.
Combine base
Strain the syrup into a bowl to remove zest if you prefer a smoother sorbet, or leave the zest in for extra texture. Add the strained tangerine juice, 2 tablespoons fresh lemon juice, 2 tablespoons light corn syrup (if using), and 1 teaspoon fine sea salt to the cooled syrup. Stir well to combine. Taste and adjust: add up to 1 tablespoon more lemon juice if it needs extra brightness or up to 2 tablespoons more sugar dissolved in a little warm water if not sweet enough.
Chill mixture
Cover the sorbet base and chill thoroughly in the refrigerator until cold, at least 2 hours or overnight. Chilling ensures better freezing and texture.
Freeze in ice cream maker
Once chilled, pour the sorbet base into a pre-frozen ice-cream maker and churn according to manufacturer instructions (typically 20–30 minutes) until it reaches a soft-serve consistency. If you want slightly softer scoops and better scoopability later, stir in 1 tablespoon vodka or citrus liqueur during the last minute of churning (optional).
Firm up
Transfer churned sorbetto into a shallow, airtight container. Smooth the top, press a piece of plastic wrap directly onto the surface to prevent ice crystals, and freeze 3–4 hours until firm.
Finishing & Serving
Prep garnish
While the sorbet chills, segment or thinly slice about 1 cup fresh tangerine segments. Pat dry on paper towel to remove excess juice. Lightly bruise or chiffonade mint leaves if desired.
Scoop and serve
Remove sorbet from freezer about 5 minutes before serving to soften slightly. Use a warm (dip in hot water and dry) scoop or spoon to make neat scoops. Plate 1–2 scoops per serving, top with a few tangerine segments and mint leaves. Optionally drizzle a few drops of reserved fresh juice or a small spoon of extra syrup for extra shine.
Storage
Store leftover sorbet in an airtight container in the freezer for up to 2 weeks. To refresh if icy, let sit at room temperature 7–10 minutes and stir vigorously with a fork before re-freezing for 30 minutes.
