Cookie Gelato Base

In a medium saucepan, combine 2 cups whole milk, 1 cup heavy cream, 3 tbs granulated sugar, and 2 tbs light brown sugar. Warm over medium heat, stirring occasionally, until sugar is dissolved and mixture is hot but not boiling (steam and small bubbles around edge), about 5–7 minutes.

Whisk 4 egg yolks in a medium bowl until smooth. Slowly ladle about 1/3 cup of the hot milk mixture into the yolks while whisking constantly to temper. Repeat with another 1/3 cup. Then pour tempered yolks back into the saucepan with the remaining milk mixture, whisking continuously.

Return saucepan to low–medium heat and cook, stirring constantly with a heatproof spatula or wooden spoon, scraping the bottom, until mixture thickens enough to coat the back of the spoon (an instant-read thermometer should read 175–180°F / 80–82°C). Do not boil. Remove from heat.

Stir in 1 tsp vanilla extract and 1 tsp fine sea salt. Pour custard through a fine-mesh strainer into a clean bowl to remove any cooked bits. Cool slightly, about 10 minutes, stirring occasionally to release heat.

Cappuccino Flavoring

Bloom espresso

In a small cup, dissolve 2 tsp instant espresso powder (and 1 tsp instant coffee if using) in 2 tbs hot water, stirring until fully dissolved to make a concentrated espresso slurry.

Combine with custard

Stir the espresso slurry into the warm-but-not-hot custard. Taste and adjust: add up to another 1/2–1 tsp instant coffee dissolved in a touch of hot water if you want a stronger coffee note. Mix thoroughly so flavor is even.

Chill base thoroughly

Cover the custard with plastic wrap pressed to the surface to prevent a skin from forming. Refrigerate until completely cold, at least 4 hours or preferably overnight. Chilling time is essential for smooth texture.

Place 12 chocolate sandwich cookies in a zip-top bag and crush with a rolling pin: aim for a mix of mostly coarse crumbs with some 1/4–1/2-inch chunks. You should have roughly 1 1/2 to 2 cups of crumbs/chunks depending on cookie size.

If you want a nuttier, toasted cookie flavor, melt 1 tbs unsalted butter in a skillet over medium heat. Add the cookie crumbs and toss for 1–2 minutes just to warm and slightly toast—do not burn. Cool completely before adding to gelato.

Churn and Assemble

Pour the fully chilled cappuccino custard into an ice cream maker and churn according to manufacturer’s instructions until it reaches a soft-serve consistency (typically 20–30 minutes).

Fold in cookies

When the gelato is nearly finished churning, add about two-thirds of the cookie crumbs/ chunks to the machine in the last 2–3 minutes, or fold them gently into the churned gelato with a spatula after churning to preserve chunk texture.

Layer and swirl (optional)

Spoon half of the gelato into a freezer-safe container, drizzle 1 tbs espresso syrup or 1 tbs strong espresso over the layer, sprinkle half of the remaining cookie pieces, then add the rest of the gelato. Drizzle remaining syrup and top with last cookie pieces. Use a spatula to gently swirl—don’t overmix so you keep ribbons.

Harden

Cover the surface with parchment paper or plastic wrap and press to prevent ice crystals. Freeze until firm, at least 4 hours (overnight preferred) for scoopable texture.

Before serving, let gelato sit at room temperature 5–10 minutes to soften slightly for easier scooping. Dust with 1 tsp cocoa powder if desired and serve in bowls or cones.
