Make the citrus base
In a measuring pitcher combine 0.5 cups fresh lemon juice, 0.5 cups fresh orange juice and 0.5 cups simple syrup. Stir briskly until fully combined. This creates a balanced citrus base that will marry with the sodas. Adjust sweetness with additional simple syrup to taste.
Assembly
Combine base and sodas
Divide the citrus base evenly between the four glasses (about 3 tablespoons / 22 ml per glass). Then top each glass with a layered combination: pour 125 ml chinotto, 62.5 ml aranciata, 62.5 ml aranciata rossa, and 62.5 ml limonata into each glass. Pour gently over the back of a spoon or down the side of the glass to reduce foaming and preserve some layering for visual appeal.
