Chill glass and ingredients
If possible, chill a large wine glass (or an Aperol Spritz glass) briefly in the freezer or fill with ice and water for a minute, then discard the water. Ensure Prosecco and soda are well chilled.
Add ice
Fill the chilled wine glass about three-quarters full with fresh ice cubes (approximately 1 cup).
Pour Aperol
Measure and pour 3 tablespoons of Aperol over the ice. This is the bitter-sweet base of the drink.
Add Prosecco
Slowly pour 3 ounces of chilled prosecco into the glass. Pour gently to preserve bubbles and to blend with the Aperol.
Top with soda
Add 1 ounce of chilled soda water to the glass. Pour gently to maintain effervescence and create the classic layered look.
Stir gently
Using a long bar spoon, give the drink one or two gentle stir rotations to combine Aperol, prosecco, and soda without flattening the bubbles.
Garnish and serve
Garnish with a fresh orange slice placed on the rim or floated in the glass. Serve immediately while cold and effervescent.
