Prepare

Preheat the oven to 350°F (175°C). Butter a 9-inch springform pan (or two 8-inch pans) and dust with cocoa powder or almond flour; tap out excess.

Dry ingredients

In a large bowl, whisk together the almond flour, cocoa powder, baking powder, baking soda, and fine sea salt until evenly combined and aerated.

Wet ingredients

In a separate bowl, whisk the eggs with granulated sugar and brown sugar until slightly pale and combined (about 1–2 minutes). Whisk in the yogurt (or sour cream), melted butter, vanilla, and hot espresso until smooth.

Combine batter

Pour the wet mixture into the dry ingredients and fold gently with a spatula until just combined. Scrape down the bowl and ensure there are no dry pockets. The batter will be thick but pourable; if too stiff, add 1–2 tablespoons milk or water.

Bake

Transfer the batter to the prepared pan and smooth the top. Bake on the center rack for 30–38 minutes (for a 9-inch) or until a toothpick comes out with a few moist crumbs and the cake springs back gently. If using two 8-inch pans, check after 25 minutes.

Cool

Allow the cake to cool in the pan for 15 minutes, then release and transfer to a wire rack to cool completely before assembling (about 1 hour).

Blackberry Mascarpone

Prepare blackberries

In a small saucepan over medium heat, warm 1 cup fresh blackberries with 1 tablespoon of sugar (from the cake brown sugar allocation or reserve) for 3–4 minutes until they begin to break down. Mash lightly with a fork and remove from heat. Let cool to room temperature.

Make mascarpone cream

In a chilled bowl, whisk mascarpone with powdered sugar, lemon zest and vanilla until smooth. In a separate small bowl, whip the heavy cream to soft peaks, then fold the whipped cream into the mascarpone mixture gently to keep it light. Fold in the cooled mashed blackberries, leaving some streaks for a marbled appearance. Taste and adjust sweetness if needed.

Chill

Cover and refrigerate the blackberry mascarpone until the cake is ready to assemble, at least 30 minutes.

Blackberry-Orange Coulis

Cook fruit

Combine 2 cups blackberries, 1/2 cup orange juice, 1/4 cup granulated sugar, lemon juice and orange zest in a medium saucepan over medium heat. Bring to a gentle simmer, stirring occasionally, and cook 6–8 minutes until the berries break down and the mixture thickens slightly.

Blend & strain

Remove from heat and let cool slightly. Purée the mixture with an immersion blender or in a blender until smooth. For a silky coulis, press the purée through a fine-mesh sieve, discarding seeds and solids. Taste and adjust sweetness or acidity if needed. Chill until assembly.

Espresso Honeycomb

Setup

Line a baking sheet with parchment paper and lightly oil it. Have a small bowl with baking soda measured and ready near the stove — the reaction is quick so timing is important.

Cook sugar

In a medium heavy-bottomed saucepan, combine 1 cup granulated sugar, 2 tablespoons water, and 2 tablespoons light corn syrup over medium heat. Stir gently until sugar dissolves, then stop stirring and let the mixture come to a boil. Use a candy thermometer and bring to 300–310°F (hard crack stage).

Finish with espresso & soda

As soon as the caramel reaches 300–310°F, remove from heat. Quickly whisk in the instant espresso powder mixed with 1/2 teaspoon warm water to dissolve (or sprinkle in directly) and then immediately and carefully sprinkle in the 1 teaspoon baking soda while whisking once; the mixture will foam and puff up. Pour the foamy honeycomb onto the prepared parchment in one motion and spread very slightly with a spatula if needed. Let cool completely and harden (10–20 minutes). Break into shards for garnish.

Safety note

The caramel is extremely hot—avoid skin contact and use care when whisking in baking soda to prevent splatter.

Finish & Assembly

Level cake

If the cooled cake has a domed top, level it with a serrated knife to create an even surface. If using two layers, split each as desired to create up to 2 layers of filling.

Layer

Place the bottom layer of the cake on a serving plate. Spoon or pipe a generous layer (about 1 cup) of blackberry mascarpone onto the cake and spread evenly. Drizzle 2–3 tablespoons of the blackberry-orange coulis over the mascarpone layer for bright flavor. Top with the next cake layer, repeat with remaining mascarpone (reserve a little for garnish) and a light drizzle of coulis.

Garnish

Scatter fresh blackberries around the top, spoon any remaining coulis into a small jug for serving, dust lightly with powdered sugar if desired, and arrange espresso honeycomb shards on top for crunch and visual contrast.

Chill before serving

Chill the assembled cake for at least 45 minutes to set the mascarpone and make slicing cleaner. Bring to room temperature for 10–15 minutes before serving for best flavor.
