Taco Meat (choose one)
Ground Beef
Heat a large skillet over medium-high heat. Add the ground beef and the diced half onion. Cook, breaking up with a spoon, until browned and no pink remains, about 6–8 minutes. Drain excess fat if needed. Add salt, black pepper, cumin, chili powder, and garlic powder. Stir and cook 1–2 minutes until fragrant. Squeeze 1 tablespoon lime juice over the meat, stir, and remove from heat. Keep warm.
Carne Asada (diced)
If using diced skirt/flank steak, toss with 1 tablespoon vegetable oil, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon cumin, 1 teaspoon chili powder, and 1 tablespoon fresh lime juice. Heat a skillet or grill pan over high heat until very hot. Add the steak in a single layer and sear until nicely browned, about 2–3 minutes per side depending on dice size. Remove from heat and let rest 3 minutes, then coarsely chop if needed. Keep warm.
Shredded Chicken
If using cooked chicken breasts or thighs, shred meat and sauté in 1 tablespoon oil with the diced half onion over medium heat 2–3 minutes. Add salt, pepper, cumin, chili powder, and garlic powder and 1 tablespoon lime juice; stir to combine and heat through, 2–3 minutes. If starting from raw chicken, poach 1 lb in simmering salted water until internal temp 165°F (about 12–15 minutes), shred, then season as above.
Pico de Gallo
Combine the diced tomatoes, 1/2 diced white onion, chopped cilantro, minced jalapeño (if using), 1 tablespoon lime juice, and 1/2 teaspoon salt in a bowl. Stir to combine and let rest at room temperature for 10–15 minutes to allow flavors to meld. Taste and adjust salt or lime as needed.
Refried Beans & Rice
Warm the refried beans in a small saucepan over low heat, stirring occasionally. If thick, add 1–2 tablespoons water and stir until smooth. Heat the cooked rice according to package or reheat gently in a covered skillet with a splash of water and a pinch of salt until warmed through.
Tortillas & Assembly
Warm the corn tortillas so they are pliable: heat a dry skillet over medium-high heat and warm each tortilla 20–30 seconds per side until slightly charred or wrap stacked tortillas in a damp kitchen towel and microwave 30–45 seconds. Alternatively, lightly brush with 1 tablespoon oil and char on a hot skillet for 10–15 seconds per side. Keep tortillas wrapped in a towel to stay warm and soft.
Assemble 3 tacos per serving: place 3 warm tortillas on a plate, distribute the cooked meat evenly among them (about 1/3 lb total meat per 3 tacos), top with a spoonful of pico de gallo, a sprinkle of chopped white onion and cilantro, and crumbled queso fresco if using. Serve with a scoop of refried beans and rice on the side, and a dollop (about 1 tablespoon) of sour cream per plate. Add lime wedges to squeeze over tacos.
Final Garnish & Serving
Serve immediately while tortillas and meat are hot. Offer extra lime wedges, hot sauce, and additional cilantro or onions at the table. Each order contains 3 street tacos with sides of refried beans, rice, pico de gallo, and sour cream.
