Mix dry ingredients
In a large bowl whisk together the all-purpose flour, masa harina, granulated sugar, baking powder, baking soda, and salt until evenly combined. The masa harina adds a light corn flavor and slightly grittier texture traditional to güeras.
Mix wet ingredients
In a separate bowl or large measuring cup, whisk the milk, buttermilk, and eggs until smooth. Stir in the melted butter and the 1 tablespoon of vegetable oil (or reserve oil for the pan).
Combine batter
Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula or wooden spoon until just combined — small lumps are fine. Do not overmix. The batter should be pourable but slightly thicker than classic American pancake batter; if it's too thick, add up to 2 tablespoons more milk.
Rest batter
Let the batter rest for 8–10 minutes at room temperature. This hydrates the masa harina and lets the baking powder and soda begin to work, producing a tender, slightly airy pancake.
Preheat and oil pan
Heat a nonstick skillet or griddle over medium heat until hot (about 350°F / 175°C if using an infrared thermometer). Lightly brush or wipe the surface with the remaining oil (about 1 teaspoon per 2 pancakes).
Cook pancakes
For each güera, pour about 1/4 cup (60 ml) of batter onto the hot pan, leaving space between. Cook until bubbles form across the surface and edges look set, 2–3 minutes. Flip and cook until the underside is golden and the centers are cooked through, another 1–2 minutes. Adjust heat as needed to avoid burning. Repeat, re-oiling the pan lightly between batches. Keep finished pancakes warm in a low oven (200°F / 95°C) if making many.

Traditional savory finish
For a savory güera, stack pancakes and spread a thin layer of Mexican crema (or sour cream) between them. Sprinkle grated Cotija cheese over each layer or on top. Serve warm so the cheese softens slightly against the crema.
Serve
Serve 2–3 güeras per person (depending on appetite) while hot. Offer both savory and sweet accompaniments so diners can choose. Leftover pancakes keep refrigerated in an airtight container for up to 3 days and reheat gently in a skillet or oven.
