Method
Ribeye Steak
Prepare steaks
Remove steaks from refrigerator 30–45 minutes before grilling to come to room temperature. Pat dry with paper towels.
Brush both sides of each ribeye with 2 tablespoons olive oil. Season evenly with kosher salt, black pepper, garlic powder and smoked paprika, pressing the seasoning lightly into the meat.
Grill steaks 4–6 minutes per side for medium-rare (depending on thickness, about 1 to 1 1/4-inch steaks). Use an instant-read thermometer: 125–130°F for medium-rare, 135°F for medium. Adjust time for desired doneness.
If desired, during the last minute of cooking, add 1 tablespoon butter on top of each steak to melt and baste. Remove steaks to a cutting board and tent loosely with foil. Rest 5–10 minutes before slicing.
Grilled Shrimp
Toss shrimp with 2 tablespoons olive oil, lime juice, 1 teaspoon minced garlic, chili powder, 1/2 teaspoon salt and 1/2 teaspoon black pepper. Marinate 10–15 minutes (do not exceed 30 minutes or acid will begin to cook shrimp).
Grilled Mushrooms Topping
In a small bowl, melt 2 tablespoons butter with 1 tablespoon olive oil. Stir in 1 teaspoon minced garlic, thyme leaves, 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Mexican Rice
Rinse rice under cold water until water runs clear; drain well.
In a medium saucepan, heat 2 tablespoons vegetable oil over medium heat. Add the drained rice and cook, stirring frequently, until grains begin to turn golden, about 4–5 minutes.
Stir in 3 tablespoons tomato sauce, 1/2 teaspoon ground cumin and 1 teaspoon salt. Add 3 cups chicken broth, bring to a boil.
Reduce heat to low, cover and simmer 18–20 minutes until liquid is absorbed and rice is tender. Remove from heat and let sit covered 5 minutes, then fluff with a fork.
Refried Beans
In a small saucepan, heat 1 tablespoon lard or vegetable oil over medium heat. Add 1/4 finely chopped onion and sauté until soft, about 3 minutes.
Add 2 cups canned refried beans and 1/2 teaspoon salt. Stir to combine and heat through, about 4–6 minutes. If beans are too thick, add 1–2 tablespoons water to reach desired consistency.
Mash and smooth with a spoon or potato masher, then keep warm until serving.
Finishing & Plating
Slice rested ribeye against the grain into 1/4-inch thick slices. Place steak slices on plate.
Serve with a scoop of Mexican rice and a portion of refried beans. Garnish with chopped cilantro and lime wedges. Serve immediately.
