Preparation of Grapes
Harvest and Prepare Grapes
Select ripe grapes, preferably Italian varieties. Wash them thoroughly to remove any dirt or impurities.
Crush Grapes
Crush the grapes to release their juice and pulp. This can be done using a grape crusher or by hand.
Fermentation
Transfer to Fermentation Vessel
Place the crushed grapes, along with the skins, pulp, seeds, and stems, into the fermentation vessel.
Add Water
Add 1 liter of water to the grape mixture to help with fermentation.
Inoculate with Yeast
Sprinkle the wine yeast over the mixture and gently mix it in to distribute evenly.
Ferment
Cover the fermentation vessel and allow the mixture to ferment for about 7-14 days, stirring daily. The fermentation is complete when bubbling stops.
Distillation
Prepare Distillation Apparatus
Set up the distillation apparatus according to the manufacturer's instructions.
Distill Fermented Mixture
Pour the fermented grape mixture into the still. Heat slowly to allow the alcohol to vaporize and then condense back into liquid.
Collect Distillate
Collect the distillate in separate containers. The first portion (heads) and last portion (tails) can be discarded, keeping only the heart for grappa.
