Separate the Eggs

Separate the egg yolks from the egg whites into two different bowls.

Make the Egg Mixture

Whisk the egg yolks with granulated sugar until the mixture is pale and creamy. Add the mascarpone cheese and vanilla extract, and mix until smooth.

Whip the Egg Whites

In another bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture until fully combined.

Prepare Coffee Mixture

In a shallow dish, combine the brewed coffee and dark rum or coffee liqueur.

Dip the Ladyfingers

Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

Layer the Ingredients

In a rectangular dish, place a layer of soaked ladyfingers at the bottom, followed by half of the mascarpone mixture. Repeat with another layer of soaked ladyfingers and top with the remaining mascarpone mixture.

Dust with Cocoa

Sift cocoa powder evenly over the top layer of mascarpone mixture.

Chill the Tiramisu

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
