Gelato Preparation

Make the Base

In a saucepan, combine whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm, but not boiling.

Combine Egg Yolks

In a bowl, whisk the egg yolks until they become pale. Gradually pour the warm milk mixture into the egg yolks while whisking constantly to temper the eggs.

Cook the Mixture

Return the mixture to the saucepan over low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-7 minutes).

Cool and Add Flavor

Remove from heat and stir in vanilla extract. Let the mixture cool completely, then divide into portions for your desired flavors.

Add Flavorings

For chocolate gelato, whisk in cocoa powder. For strawberry gelato, add pureed strawberries. For pistachio gelato, stir in chopped pistachios. For coffee gelato, mix in cooled brewed coffee.

Chill and Churn

Chill the flavored mixtures in the refrigerator for at least 4 hours or overnight. Then churn in an ice cream maker according to the manufacturer's instructions.

Freeze and Serve

Transfer the gelato to a container and freeze for at least 2 hours before serving. Scoop and enjoy!
