Clean mushrooms: wipe caps with a damp cloth and slice into 1/4-inch slices (or tear if using oyster mushrooms). Drain and julienne canned bamboo shoots; if using fresh, blanch briefly and slice into similar-sized pieces.

Slice the red bell pepper (if using) into thin strips. Slice green onions on a bias separating white from green parts. Mince garlic and julienne or mince ginger.

Measure out soy sauce, oyster sauce, shaoxing wine, sesame oil, sugar and pepper. Warm the broth in the microwave or on the stove.

Make a cornstarch slurry: combine cornstarch with cold water and stir until smooth; set aside.

In a small bowl, whisk together light soy sauce (3 tbs), oyster sauce (1.5 tbs), shaoxing wine (1 tbs), sesame oil (1 tsp), sugar (1/2 tsp), and white pepper (1/4 tsp). Add the warm broth (1/2 cup) and stir to combine.

Taste quickly and adjust seasoning (add a bit more soy for saltiness or a pinch more sugar for balance). Keep sauce nearby.

Heat a wok or large skillet over medium-high heat until hot. Add vegetable oil (2 tbs) and swirl to coat.

Add the white parts of the green onion, minced garlic, and ginger. Stir-fry 20–30 seconds until fragrant but not browned.

Add sliced mushrooms to the wok in a single layer. Let them sear without stirring for 30–45 seconds so they release liquid and develop color, then stir-fry 1–2 minutes until most liquid has evaporated.

Add bamboo shoots and red bell pepper. Stir-fry 1–2 minutes until the bamboo shoots are heated through and pepper begins to soften.

Pour the prepared sauce into the wok, stir to combine, and bring to a gentle simmer. Let the mixture cook 1–2 minutes so flavors meld.

Give the cornstarch slurry a quick stir, then slowly drizzle it into the simmering stir-fry while stirring. Continue cooking 30–60 seconds until sauce thickens and becomes glossy. If the sauce becomes too thick, add a tablespoon or two of warm broth or water to loosen.

Stir in the green parts of the green onions, adjust seasoning if needed, and remove from heat.

Finish and Serve

Transfer to a serving plate. Sprinkle toasted sesame seeds and chopped cilantro or additional green onion on top if using.
