Prepare Eggplant
Trim and slice
Wash the eggplants. Trim off the stems. Cut each eggplant into 1/2-inch thick slices or into 2-inch chunks lengthwise depending on desired presentation. Lightly sprinkle the slices with 1 tsp salt and let sit 10 minutes to draw out bitterness and moisture. Pat dry with paper towels.
Optional light coating
If you want a slightly crisper exterior, toss the dried eggplant pieces with 2 tablespoons cornstarch to lightly coat; shake off excess. This step is optional but helps the eggplant hold sauce better.
Fry or pan-sear eggplant
Heat 1 cup vegetable oil in a large skillet or wok over medium-high heat until shimmering (about 350°F if using a thermometer). In batches to avoid crowding, add eggplant pieces and fry until golden brown and tender, 3–5 minutes per side for slices or 5–7 minutes for chunks. Adjust heat to avoid burning. Transfer fried eggplant to a plate lined with paper towels to drain and season lightly with a pinch of salt. Reserve about 1–2 tablespoons of oil in the pan for the sauce; discard or save the rest.
Make Garlic Sauce
Mix sauce base
In a bowl, whisk together 3 tablespoons low-sodium soy sauce, 1 teaspoon dark soy sauce (if using), 1 tablespoon rice vinegar, 1 teaspoon granulated sugar, 1 cup chicken or vegetable stock (or water), 1 teaspoon sesame oil, and the optional 1 teaspoon crushed red pepper flakes. Taste and adjust balance so sauce is savory with a hint of tang and sweetness.
Prepare cornstarch slurry
In a small cup, dissolve 1 teaspoon cornstarch in 1 tablespoon cold water until smooth and set aside.
Combine and thicken
Pour the prepared sauce base into the skillet with the garlic and ginger. Bring to a gentle simmer. Stir the cornstarch slurry once more and slowly whisk it into the simmering sauce. Cook 1–2 minutes until the sauce thickens to a glossy consistency that lightly coats a spoon. If sauce becomes too thick, add up to 2 tablespoons water or stock to reach desired consistency.
Finish sauce
Stir in the thinly sliced scallions and 1 teaspoon sesame oil (if additional aroma desired). Adjust seasoning: add a pinch of salt or another 1/2 teaspoon sugar if needed. Remove from heat.
Combine and Serve
Transfer the fried eggplant to the skillet with the sauce or pour the sauce over the eggplant in a serving dish. Gently toss or spoon the sauce so all pieces are evenly coated, being careful not to break the eggplant. Warm together for 30–60 seconds so eggplant absorbs sauce.
Plate the eggplant, sprinkle with toasted sesame seeds and fresh cilantro leaves if using. Serve immediately as an appetizer or side with steamed rice.
