Press and drain

Remove the tofu from its package and drain the liquid. Wrap the block in a clean kitchen towel or paper towels and place a heavy weight (a cast-iron skillet or a few cans) on top for 20–30 minutes to press out excess water. If short on time, slice the tofu before pressing to expose more surface area and press for 15 minutes.

Cut

After pressing, unwrap and pat the tofu completely dry. Cut into bite-sized cubes, about 3/4–1 inch (2–2.5 cm) each.

Season and coat

Place the cubes in a bowl, sprinkle with 1 tsp kosher salt and toss gently. Add 3 tablespoons cornstarch and toss or shake in a sealed container until each cube has a thin, even coating of cornstarch. Shake off any excess cornstarch.

Pan-fry until crispy

Heat a large nonstick or stainless-steel skillet over medium-high heat. Add 3 tablespoons neutral oil and heat until shimmering but not smoking. Add tofu cubes in a single layer without crowding — work in batches if needed. Cook undisturbed for 3–4 minutes until the bottom is deeply golden and releases easily. Flip and continue cooking, turning occasionally, for another 3–4 minutes so all sides are crispy. Total cook time per batch ~8–10 minutes. Transfer cooked tofu to a wire rack or paper towel-lined plate and let cool slightly; cooling helps exterior stay crisp.

Make the sauce

While tofu is pressing or cooking, whisk together 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon honey or maple syrup, 1 teaspoon grated fresh ginger, and 1 minced garlic clove in a small bowl. Add 1/4 tsp chili flakes if using. Taste and adjust: add more vinegar for tang or honey for sweetness.

Toss (optional)

If you prefer tofu coated in sauce rather than served with a dipping sauce, place the hot crispy tofu in a large bowl, pour 1–2 tablespoons of the sauce over it, and toss gently to coat. Do this just before serving to maintain crispness; avoid soaking the tofu.

Finish & Serve

Plate the crispy tofu on a chilled platter (since this is a cold appetizer, allow the cooked tofu to cool to room temperature or chill briefly in the refrigerator for 10–15 minutes). Arrange lime wedges alongside.

Garnish with 1 tablespoon thinly sliced green onions, 1 teaspoon toasted sesame seeds, and chopped cilantro or parsley if desired. Serve the remaining sauce in a small bowl for dipping.

To serve as a cold appetizer: ensure tofu is at room temperature or slightly chilled, not hot. The tofu will keep a pleasant chew and the exterior crispness will be slightly reduced when cooled; the sauce provides brightness and contrast.
