Prepare Bananas
Peel and halve
Peel the bananas. Cut each banana in half crosswise (shortwise) so you have 8 short banana pieces. If preferred, you can cut each half on the diagonal for a longer surface.
Lightly pat the banana pieces with a paper towel to remove excess moisture. This helps the batter adhere better and reduces splatter during frying.
Make Batter
Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour, cornstarch, granulated sugar, baking powder, and fine salt until evenly combined.
Combine wet ingredients
In a separate small bowl, whisk the egg with the vanilla extract. Add the cold sparkling water and gently mix to combine. Cold sparkling water gives extra crispness.
Pour the wet mixture into the dry ingredients and stir gently with a fork or whisk just until combined. The batter should be slightly thick but still fluid enough to coat the bananas (a thick pancake-batter consistency). Do not overmix — a few small lumps are fine. If batter seems too thick, add up to 2 tablespoons more cold water.
Fry Bananas
Heat oil
Pour the oil into a heavy-bottomed skillet or medium saucepan to a depth of about 1.5–2 inches (or use a deep fryer). Heat the oil over medium heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter into the oil — it should sizzle and rise slowly to the surface.
Coat and fry
Working in batches (do not overcrowd the pan), hold a banana piece by one end or use tongs, dip it into the batter to coat evenly, letting excess drip back into the bowl. Carefully lower the coated banana into the hot oil. Fry 2–3 pieces at a time for about 2–3 minutes per side, turning once, until the batter is golden brown and crisp. Total fry time per piece ~4–6 minutes depending on size and temperature.
Drain
Use a slotted spoon or tongs to remove fried bananas and transfer them to a paper towel-lined plate or wire rack set over a baking sheet to drain excess oil. Lightly sprinkle a pinch of salt over the hot fried bananas if desired.
Finish & Serve
Optional: Squeeze a little lemon or lime over the bananas to add brightness, or serve with a dipping sauce such as caramel or chocolate sauce on the side.
Serve immediately for best crispness. Leftovers will lose crisp texture if stored; reheat briefly in a 350°F (175°C) oven for 5–7 minutes to crisp again.
