Ranchero Sauce

Simmer the sauce
Stir in the tomato paste and cook 1 minute. Add the diced tomatoes, 1/4 cup broth, 1 tsp salt, 1/2 tsp black pepper, 1 tsp ground cumin and 1/2 tsp smoked paprika. Bring to a gentle simmer, reduce heat to low, and simmer uncovered for 8–10 minutes until slightly thickened.

Taste and adjust seasoning. Stir in 1 tablespoon lime juice and 2 tablespoons chopped cilantro (if using). Keep warm over very low heat while you finish the rest of the components.
Black Beans

In a small skillet, heat 1 teaspoon olive oil over medium heat. Add the drained and rinsed black beans, 1/2 tsp ground cumin, 1/4 tsp garlic powder, 1/2 tsp salt and 2 tablespoons water or broth.

Cook, stirring occasionally, 4–6 minutes until the beans are heated through and most liquid has absorbed. For a creamier texture, gently mash about one-third of the beans with the back of a spoon. Keep warm.

Warm the tortillas: Heat a dry skillet or comal over medium-high heat. Warm each corn tortilla about 20–30 seconds per side until pliable and slightly charred in spots. Stack and keep wrapped in a clean towel to stay warm.

Fry the eggs
In a nonstick skillet, heat 1 tablespoon vegetable oil or butter over medium heat until shimmering. Crack 2 eggs into the pan (or one at a time if needed). Season with 1/4 tsp salt and 1/4 tsp black pepper. Cook until whites are set and edges are crisp, about 2–3 minutes for sunny-side up; if you prefer yolks more set, cover the pan briefly or flip for over-easy. Remove from heat.
Assemble & Garnish

Plate: Place two warm corn tortillas on a plate (1 tortilla per serving). Spoon half of the black beans onto each tortilla in a thin layer.

Top each bean-layered tortilla with 1 fried egg.

Spoon 3–4 tablespoons of warm ranchero sauce over each egg, letting some run onto the tortilla and beans.

Add 2 tablespoons sour cream and sprinkle 1/4 cup shredded white cheddar across the two servings (adjust to taste).
