Method
Prepare croissants and cheese

Split and toast
Slice each croissant horizontally through the middle to create a top and bottom. Set a large nonstick skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt and foam. Place croissant halves cut-side down in the skillet in a single layer. Toast until golden brown and crisp, about 1–2 minutes per side for the cut faces. Remove toasted halves and keep warm on a plate tented with foil.

Place one slice of cheddar on each croissant bottom while still warm so the cheese begins to soften. Reserve croissant tops.

Crack eggs and season
Crack eggs individually into a small bowl or ramekin to check for shells. Gently slide each egg into the skillet. Season each egg with a light sprinkle (about 1/4 tsp per egg) of salt and a pinch of black pepper.

Fry to desired doneness
For sunny-side-up: cook undisturbed until whites are set but yolks still runny, about 2–3 minutes. For over-easy: cook until whites set (about 2 minutes), then carefully flip and cook 10–20 seconds more. For over-medium: flip and cook 30–45 seconds more. If you prefer yolks fully set, cook longer or cover the pan with a lid for 30–60 seconds after flipping.

If making multiple sandwiches, fry in batches and keep cooked eggs on a warm plate.
Assemble sandwiches

Place the croissant bottoms with softened cheddar on a work surface. Gently set one fried egg on top of the cheese on each bottom. If you like extra melted cheese, place the assembled bottoms (egg + croissant) under a preheated broiler for 30–60 seconds, watching carefully so cheese melts but croissant does not burn.
