Prepare filling

Blanch asparagus
Bring a small pot of salted water to a boil. Add asparagus pieces and blanch for 1 minute until bright green and just tender. Immediately transfer to an ice bath to stop cooking. Drain and pat dry.

Season crab
In a bowl, gently toss jumbo lump crab meat with lemon zest, chopped parsley, chives, 1 tsp olive oil, 1/2 tsp salt and 1/4 tsp black pepper. Be careful not to break up the lumps; set aside refrigerated until ready to assemble.

Make the omelette

Beat eggs
In a medium bowl, crack the 4 large eggs. Add 2 tablespoons whole milk, 1 tsp salt, and 1/2 tsp freshly ground black pepper. Whisk vigorously until uniform and slightly frothy.

Heat pan
Heat an 8–10 inch nonstick or well-seasoned skillet over medium-low to medium heat. Add 2 tablespoons unsalted butter and 1 teaspoon vegetable oil. Heat until butter is melted and foaming but not browned (butter should just begin to sizzle gently).

Cook eggs
Pour the beaten eggs into the pan and let sit undisturbed for 8–12 seconds until the edges begin to set. Using a heatproof spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this process for about 45–60 seconds until the omelette is mostly set but still slightly glossy on top (soft curd).

Add filling
Arrange the blanched asparagus pieces across one half of the omelette. Scatter the seasoned crab meat (drained of any liquid) evenly over the asparagus, then distribute the cooked shallot and crumble 3 ounces goat cheese over the crab. Save a few chive pieces for garnish.

Fold and finish
Using the spatula, carefully fold the empty half of the omelette over the filling to form a half-moon. Let cook undisturbed for 20–30 seconds to warm the filling and allow the goat cheese to soften. If desired, place the pan briefly under a preheated broiler for 20–30 seconds to brown the top lightly (optional).

Slide and rest
Gently slide the omelette onto a warm plate, seam-side down. Allow to rest for 30 seconds so residual heat completes cooking and flavors meld.
