Cook edamame

Bring 4 cups water and 1 tablespoon kosher salt to a rolling boil in a medium saucepan. Add 1 cup frozen edamame (in pods) and return to a boil. Cook until pods are tender and bright green, 4–5 minutes for standard frozen edamame. If using very large pods, cook 5–6 minutes.

Drain the edamame in a colander and immediately rinse briefly under cold running water or plunge into an ice bath to stop cooking and preserve color. Drain thoroughly and transfer to a mixing bowl while still warm.

Make dressing

In a small bowl or jar combine 1 tablespoon light soy sauce, 1 teaspoon rice vinegar, 1 teaspoon toasted sesame oil, 1 teaspoon chili oil or chili crisp, 1 tablespoon fresh lemon juice, 1 teaspoon grated fresh ginger, 1 teaspoon sugar or honey, and 1 very finely minced garlic clove. Whisk or shake until sugar dissolves and ingredients emulsify slightly.

Taste and adjust: add up to 1/2 teaspoon more chili oil for heat, a pinch more sugar if too tart, or a little more lemon juice for brightness. Stir in 1 teaspoon toasted sesame seeds and 1/4 teaspoon freshly ground black pepper.

Finish & Serve

Dress edamame

Pour the dressing over the warm, drained edamame and toss with a spoon or shake in a covered bowl so the pods are evenly coated. The warmth helps the flavors absorb into the pods.

Adjust seasoning by sprinkling 1/2 teaspoon sea salt or flaky salt over the pods and toss again. Transfer to a serving bowl.

Garnish with 1 tablespoon thinly sliced scallions, another 1/2 teaspoon toasted sesame seeds (optional), and serve with 2 lemon wedges on the side for extra brightness. To eat, squeeze lemon over pods as desired and pop beans from pods into your mouth; discard pods.
