Fried Chicken
Marinate the Chicken
In a large bowl, combine the buttermilk and salt. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Coating
In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper.
Fry the Chicken
Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Dredge each piece of chicken in the flour mixture, shaking off excess. Fry in batches until golden brown and cooked through, about 15-18 minutes. Drain on paper towels.

Gumbo Gravy
Make the Roux
In a small saucepan, melt butter over medium heat. Stir in flour and cook, stirring constantly, until golden brown, about 5 minutes.
Add Broth and Seasoning
Gradually whisk in chicken broth and Cajun seasoning. Cook until thickened, about 5 minutes. Season with salt to taste.
Glazed Green Beans
Cook the Green Beans
In a pot of boiling water, blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
Glaze the Beans
In a skillet, melt butter and add diced ham and brown sugar. Add the green beans and toss to coat. Cook for another 2-3 minutes.
Mac & Cheese
Cook the Pasta
Boil the macaroni according to package instructions until al dente. Drain and set aside.
Biscuits
Prepare the Dough
Preheat the oven to 450°F (232°C). In a bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.
Bake the Biscuits
Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 10-12 minutes until golden.
