Fried Chicken

Marinate the Chicken

In a large bowl, combine the buttermilk and salt. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating

In a separate bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Fry the Chicken

Heat vegetable oil in a large skillet or deep fryer to 350°F (175°C). Dredge each piece of chicken in the flour mixture, shaking off excess. Fry in batches until golden brown and cooked through, about 15-18 minutes. Drain on paper towels.

Mashed Potatoes

Cook the Potatoes

In a large pot, cover the cubed potatoes with salted water and bring to a boil. Cook until tender, about 15-20 minutes. Drain.

Mash and Season

Return the potatoes to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste.

Gumbo Gravy

Make the Roux

In a small saucepan, melt butter over medium heat. Stir in flour and cook, stirring constantly, until golden brown, about 5 minutes.

Add Broth and Seasoning

Gradually whisk in chicken broth and Cajun seasoning. Cook until thickened, about 5 minutes. Season with salt to taste.

Glazed Green Beans

Cook the Green Beans

In a pot of boiling water, blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.

Glaze the Beans

In a skillet, melt butter and add diced ham and brown sugar. Add the green beans and toss to coat. Cook for another 2-3 minutes.

Mac & Cheese

Cook the Pasta

Boil the macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a saucepan, melt butter over medium heat. Stir in the milk and cheese, mixing until the cheese is melted and smooth. Combine with the macaroni and stir to combine. Season with salt to taste.

Biscuits

Prepare the Dough

Preheat the oven to 450°F (232°C). In a bowl, mix flour, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

Bake the Biscuits

Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 10-12 minutes until golden.
