Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Wet Ingredients

In a separate bowl, beat the eggs and then add the buttermilk and melted unsalted butter. Whisk until smooth.

Combine Wet and Dry Ingredients

Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Prepare the Pan

Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook the Pancakes

Pour 1/4 cup of the pancake batter onto the heated skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.

Serve the pancakes warm with honey butter and golden syrup. Optionally, add a choice of bacon, pork, or chicken sausage, and top with fresh seasonal fruit.
