Prepare the Cream Cheese Filling

In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. Set aside.

Make the Pancake Batter

In another large bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk together the milk, eggs, and melted butter until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just mixed. Do not overmix; it's okay if the batter is a little lumpy.

Cook the Pancakes

Preheat a griddle or frying pan over medium heat and lightly grease it with butter or cooking spray. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.

Assemble the Griddle Special

Once the pancakes are cooked, spread a generous amount of the cream cheese filling on one pancake. Top with another pancake to create a sandwich. Repeat this process for the remaining pancakes.
