    Preheat & prep

    Preheat the oven to 425°F (220°C). Wash the red potatoes thoroughly and trim any blemishes. Cut potatoes into 1-inch cubes (leave the skins on). Pat the pieces dry with a towel to help them crisp.

    Season potatoes

    Place the cubed potatoes in a large bowl. Add 2 tbsp extra-virgin olive oil, 1 tbsp melted or softened butter, minced garlic, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp salt, and 1 tsp freshly ground black pepper. Toss well to coat every piece evenly.

    Parmesan mix

    Add 3 tbsp grated Parmesan cheese to the bowl and toss again so the cheese sticks to the oiled potatoes. The cheese will brown in the oven and create a savory crust.

    Arrange for roasting

    Spread the seasoned potato cubes in a single layer on a rimmed baking sheet lined with parchment or a silicone mat. Ensure pieces are not crowded — use two sheets if necessary for even browning.

    Roast

    Roast in the preheated oven for 25–30 minutes, turning the potatoes once halfway through (at about 12–15 minutes). Roast until edges are golden-brown and potatoes are tender when pierced with a fork. If they need more browning, roast an additional 3–5 minutes.

    Remove the potatoes from the oven. Immediately sprinkle the remaining 2 tbsp grated Parmesan (for serving) over them so it melts slightly. Add 2 tbsp chopped fresh parsley and, if using, 1 tsp lemon zest. Toss gently on the baking sheet or transfer to a serving bowl and toss to combine.
