    Preheat the oven to 375°F (190°C). In a medium saucepan, bring 4 cups water and 1 cup whole milk to a gentle simmer over medium heat.

    Slowly whisk in 1 cup grits. Reduce heat to low and cook, stirring frequently, until thickened and tender, about 20–25 minutes for stone-ground (10–15 minutes for quicker medium grits). Adjust heat to prevent sticking.

    Stir in 2 tablespoons unsalted butter, 1 1/4 teaspoons kosher salt, and 1/2 teaspoon black pepper until butter melts and is incorporated. Remove from heat.

Cheese & Flavoring

    While grits are still hot, stir in 1 1/2 cups freshly grated sharp cheddar, 2 ounces softened cream cheese, and 1/4 cup grated Parmesan. Mix until smooth and fully combined. If the mixture seems too stiff, stir in up to 2 tablespoons extra milk to loosen.
