Prepare the Beef
Preheat your oven to 350°F (175°C). Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder. Place fresh herbs on top.
Roast the Beef
Place the beef roast in a roasting pan and insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
Make the Au Jus
Once the beef is cooked, remove it from the oven and let it rest for 15 minutes. Meanwhile, pour the beef broth into the roasting pan, scraping up any browned bits from the bottom. Simmer on the stovetop for about 10 minutes to reduce slightly.
Slice and Serve
Slice the roast beef thinly against the grain. Serve with au jus on the side for dipping and top with sharp provolone cheese.
