Prepare the Crust

Preheat the oven to 175°C (350°F). In a bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Mix until crumbly. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form an even layer. Bake for 8-10 minutes until set, then remove from the oven and allow to cool.

Make the Cheesecake Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and continue to beat until creamy. Add the sour cream, vanilla extract, and mix until well combined. Finally, add the eggs one at a time, mixing well after each addition. Be careful not to overmix.

Combine and Bake

Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool and Chill

Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Then remove it from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.
